Polk Salad Recipe
You know it is springtime in the south when you hear folks talking about 'picking a mess of polk salad'. Polk salad is a wild growing perennial that appears in the spring, with it's young tender leaves and stalk being a much sought after traditional southern delicacy.

    3       lb           Polk salad -- fresh
    1       md           Onion -- diced
    1       tb           Baking soda
      1/2   c            Bacon fat
    3                    Eggs
 
   Note: Polk Salad is a spinach type vegetable that
   grows wild in the woods. Dissolve the baking soda into
   a pot of boiling water.  Add Polk salad and cook for
   3« minutes.  Drain and discard the water.  In a FRESH
   pot of boiling water, cook the Polk salad until it is
   limp and looks like cooked spinach.
   Heat the bacon fat in a skillet, add onions, the Polk
   salad, and the eggs, and sauté until eggs are done.

Things You'll Need:
large cooking pot
a Dutch oven is good
colander to wash the greens in.
salt pepper and herbs to season
hot red peppers
chopped onions
smoke pork or turkey
bacon
bag to gather poke weed


The purple berries are poisonous they can be used as a purple dye similar to ink

The polk salad plant or poke salad is a plant that is very delicious if you learn what to do with it. Warning it can be poisonous if you don't know what to avoid with it. When the poke weed first begins to grow in the In the spring the leaves of the poke salad plant are a very soft light green shoots. Its safe to eat the leaves. I don't use the steams. My mother told me when the steams turn red don't eat the leaves. I only eat the very green and young leaves. The polk salad berries are poisonous and I have read that the same is true for the stems.

2After you have gathered enough leaves to cook. Wash them in the colander drain them. Fill your pot with water and bring to a boil add the leaves of the plant. Heat lightly to par boil the leaves don't cook the leaves completely. Pour that water off.
I have eaten the cooked leaves without parboiling them and I like it.
You can just cook your bacon with chopped onions and add the poke leaves. You may consider adding some chopped mushrooms or potatoes if you like. Fix the greens as you would in a stir fry method. Season to taste. If you talk to others about cooking poke salad they may tell you to cook them with scrambled eggs.

I like to have my poke greens prepared with smoked turkey tails or ham hocks you may want other cuts of smoke pork and turkey. I will start cooking the meat ahead of time with the type of seasoning I like. I might use hot red peppers and herbs I like using. I boil the meat until its very tender. Then I add my poke greens when the liquid as been reduced I don't want the mixture too watery. I add my poke leaves sometimes mixing other greens like mustard and turnip for a scrumptious flavor. Cooking time varies according to taste some people like their greens cooked a long time some don't. I like mine cooked tender and well mixed with all the seasonings. Here is my update on the preparation I use: 6/22/09 I know many people who have heart trouble and other illnesses that would cause them to avoid salty food. Bacon smoked meats many times have additives many should avoid. I tried using just vegetable oil with a little margarine for flavor. I added just herbs like garlic and pepper and I used chopped potatoes and onions to gives the greens a little bulk then I used the stir fry method of cooking starting with cooking the chopped potatoes and onions first. The herbs in the oil was enough to season the greens. Once the greens were done I added a splash of apple cider vinegar and a little ketchup on the side as condiment to mix in as I eat.

How to Make Brown Sugar

Instructions.Things You'll Need:

•Mixing bowl
•Fork or electric hand mixer
•Measuring cup
•Sugar
•Measuring spoon
•Molasses
•Spatula

1.Get a mixing bowl and a fork or an electric hand mixer. Set aside.


2.Measure 1 cup sugar and place in the mixing bowl.


3.Add 1 tbsp. molasses into the mixing bowl with the sugar.


4.Use a fork or an electric hand mixer (at medium speed) to mix the sugar and molasses until thoroughly blended.


5.Scrape the sides of the bowl with a spatula, and then continue to mix until the sugar and molasses are well mixed.


6.Add an additional 1 tbsp. molasses to the mixture, if you prefer a darker shade of brown sugar, and continue to mix until well blended.


7.Enjoy your homemade brown sugar right from your kitchen.

How do you mix a baby formula using carnation evaporated milk?
1 can evaporated milk + 1 can water + 1 dropper of infant vitamins.
