As the time of the end gets nearer we as members of the 'Church' need to work on becoming self sufficient. I want to share with you something I did this evening which was in fact two firsts for me:
The first first: I made my own CUrd

actually is a great way to prolong the life of your milk you are about to lose. I am really sorry now that I didn't take any pictures of what the

, but not quite. Anywqay I thought I would share the method for anyone interested in making their own 'Cottage

'. I got this off a website, but it is VERY simple and easy to do.
1. Take two pints of milk and warm them up in a sauce pan on the cooker hob.
2. Remove the pan from the heat (Ideally the milk needs to be close to boiling, but not actually) allow to cool down very slightly.
3. Add to the milk 2-3 Tablespoons of Vinegar or lemon juice. (I found this worked best if done at position 2 rather than 3 before the heating process was begun.)
4. Leave the milk to further cool down as the curds and whey start to separate.
5. using a very tight sieve (or even better muslin cloth if you have) pour the curdled milk into the sieve and catching the curds and either you can catch the whey in a bowl (I did) and reuse it later (in fact I sieved me whey several times to make sure that I had all the curds I was going to get from it) or sieve it straight over a sink and just catch as much of the whey as possible.
6. Transfer the curds into a bowl and add a pinch of salt for Cottage Cheese.
(I didn't use the pinch of salt as I needed the curds for my

cake. :)
